  1. PREP: Line a cookie sheet or french bread pan with parchment paper. Heat 1/2 cup water. (Water should be hot to the touch without burning.)
  2. MIX: In the bowl of an electric stand mixer, add pizza mix, water, eggs, and oil. Using the flat paddle, combine on low speed. Scrape sides and bottom of bowl and beat on high for 2 minutes.
  3. SHAPE: Lay a piece of plastic wrap on a flat surface. (The plastic wrap is necessary to roll dough) Sprinkle 2 tbsp of tapioca starch into the center. Transfer the dough onto the starch. Sprinkle the top of dough with another 2 tbsp of starch. (The tapioca helps to keep the dough from sticking to your hands.) Press dough into a rectangle about 9 by 14 inches.
  4. ASSEMBLE: Sprinkle half of the mozzarella cheese followed with a light drizzle of oil. Top with half pepperoni, and repeat. Lift edge of plastic wrap to set the edge. Continue rolling the dough, leaving about 1-inch of dough unrolled. Lift the opposite edge onto the rolled dough; lightly press together. (If dough sticks to the plastic wrap, use a knife or a metal cake spatula and gently separate dough from wrap.) Transfer pepperoni roll onto the parchment paper by rolling it on with the plastic wrap, seam side down. tuck ends of the roll under. Brush off the excess starch and brush with oil. Sprinkle with herbs and extra cheese.
  5. RISE: Let rise in a warm place about 40 minutes. Preheat an oven to 350°F.
  6. BAKE: Bake 25 minutes or until the rolls are golden brown and a toothpick inserted into the center of a roll comes out clean. Let cool til warm. Slice and serve with your favorite marinara sauce. Enjoy!
