4 Easy Easter Cupcakes!

Make it the best Easter ever with adorable cupcakes!

Just in time for Easter, these fun and festive cupcakes are a delicious and fun kid-friendly activity your family will enjoy. Using our gluten-free cake mixes we mixed and matched our cake recipes to add a variety of fun flavors for these hop-pity-topped treats. We hope you enjoy making them as much as we did for your own celebration!

1. LAMB CHOCOLATE CUPCAKES

Our chocolate lamb cupcakes are for you chocolate lovers! These cupcakes are made with our decadent, rich, and full-bodied Chocolate Cake Mix. It really is the BEST gluten-free chocolate cake ever! Our friends have fallen in love without knowing it's gluten-free. Frosted and topped with mini marshmallow's, miniature Reese's cups and edible eyes, they are the easiest to make and adorable too!

2. EASTER BUNNY CUPCAKES

For our Easter bunny cupcakes we used the white cake mix. Frost the top and dip into crushed chocolate crumbs. Use one large marshmallow for the body and a small one for it's tail, coating each with a thin layer of frosting and roll in shredded coconut.


With white frosting, "glue" the large coated marshmallow onto the cupcake, then “glue” the small marshmallow on top of the large marshmallow. Make the feet by piping white frosting onto wax paper or parchment paper, followed by the pink. Let sit to dry 12 hours. Remove the dried feet with a table knife and use frosting to attach them at the base of the marshmallow body. Add ears if desired by cutting a large marshmallow and dipping the sticky flat side in pink sugar sprinkles, and attach with frosting opposite the feet. The bunny will look like it’s digging in the dirt.  We think they're one of the cutest cupcakes!

3. LEMON CHICK CUPCAKES

These chick cupcakes are made with our sweet tart Lemon Layered Cake recipe. This cake bursts with citrus flavor in every bite. To decorate, frost cupcakes with a light layer of lemon frosting, dip in coconut and top with a chick made with tinted yellow frosting. What takes the cake is the lemon frosting. This frosting has just enough tartness to make your taste buds sing! These are a special treat for all you lemon lovers!

4. EGG NEST CARROT CAKE CUPCAKES

And last but not the least, our spiced Carrot Cake recipe is so good! It’s a moist cake that is filled with sweet pineapple, carrots, coconut and toasted pecans.

These cupcakes are easy to decorate and perfect for Easter. We tinted the cream cheese frosting green, then used a leaf frosting tip to pipe on the grass. Drop a few gluten-free chocolate eggs into the grass to finish off these cute egg nest cupcakes. They're so incredibly tasty, one may not be enough!
